Simple Slow Cooker BBQ Chicken

Placing these few ingredients in the Crockpot on a Saturday morning before Pickleball (him) or hiking (me) and coming home to a yummy smelling house and a hot meal is the way to go.

The cooked chicken shreds quickly with two forks and then returns into the hot crockpot to saturate in the sauce. I added a little more sauce (and a little more Tabasco to my individual sandwich.

Hub needs gluten-free rolls and has been using Udi’s Gluten-Free Baguettes. From Safeway I have been getting European Brioche hamburger buns and they are sinfully good.

This recipe lends itself well to sliders for smaller appetites or appetizers.

Simple Slow Cooker BBQ Chicken

This simple recipe makes the best BBQ chicken for sliders or sandwiches

Equipment

  • 1 Slow Cooker

Ingredients

  • 2 large chicken breasts
  • 1 cup prepared BBQ sauce I used Trader Joe's Kansas City Style
  • ½ tsp hot sauce or to taste I used Tobasco
  • salt and pepper to taste
  • ½ sliced onion

Instructions

  • Add chicken to slow cooker, sprinkle with salt and pepper.
  • Add BBQ sauce and hot sauce. Feel free to add more to cover the chicken about half way. I added about 1/4 cup of water at this point.
  • Add the sliced onions to the top of the breasts. I stirred the pot and flipped the breasts a couple of times to ensure they were saturated with sauce as they cooked.
  • Cover and cook on low until chicken is done and tender. My Crockpot cooks quickly. In 4 hours on low the chicken was done, cooked through and easy to shred.
  • Remove chicken to a cutting board and shred each breast using two forks. Replace the chicken back in the Crockpot and stir to coat completely with sauce.

Serving the sandwiches in my cute baskets with checked paper made me feel all summery and cheerful.
