The horrible hungries have attacked me this week and I’ve let my sweet tooth control me.
Enough! Energy Bites to the rescue. Making my own sweet treat with healthy and real ingredients helps me tame the evil in my diet and get me back on track.
Energy Bites
Ingredients
- 1 cup oatmeal I used old-fashioned quick oats
- 1 cup flaked coconut flakes
- ½ cup peanut butter Add more PB if the mixture is too dry
- ½ cup ground flax seed
- ½ cup chocolate chips
- ⅓ cup honey
- ¼ cup chia seeds
- 1 tsp vanilla
Instructions
- Thoroughly mix all ingredients. Cover and chill in the fridge for 1/2 hour.
- Once chilled, roll into balls of whatever size you like.
- Store in airtight container and keep refrigerated or frozen.
It’s been quite a while since I used my grinder for coffee or spices, but my flax seed is not ground. It just took a minute to grind it all up.
Mixing a concoction containing peanut butter and honey isn’t go great on my hands, so I used my KitchenAid.
It’s easy to modify this recipe any way you like. I sometimes add pumpkin seeds, but I was out so omitted nuts this time.
The tiny Pioneer Woman serving tray isn’t available any longer, but this one is cute too!
I store them in a Ziploc in the freezer and eat them frozen. So good!
