Easy Gluten-Free Chicken Parmesan

A classic recipe modified with gluten-free flour and bread crumbs and using a jar of Kirkland Tuscany Marinara sauce made an easy gluten-free chicken parmesan ā€œlinner.ā€  Using an aluminum foil baking dish made clean up easy too!

One of my favs, Natashaā€™s Kitchen has a video and recipe for Classic Chicken Parmesan with a homemade marinara sauce. We subbed with Costco’s marinara and it tasted really good.

We whipped this up for our linner (late lunch, early dinner) and it was a success.  Then John got gluten free meals for two additional days.  Win win.

Gluten Free Ingredients

For the Ā½ cup of flour this recipe calls for, I used an all-purpose gluten-free flour we got at Walmart.  As a note, I keep my baking supplies in the freezer.  They keep fresh longer and those pesky expiration dates arenā€™t a problem.

4C Gluten-Free Plain Bread Crumbs are what I had on hand for the Ā½ cup of Italian bread crumbs in the recipe.Ā  I added a nice sprinkling of oregano to that.

Barilla gluten-free pasta is a staple at our house and always in the pantry.

Our chicken breasts were not as large as the ones on Natashaā€™s video, so we halved the recipe but used the full amount of marinara.  And mozzarella.  šŸ˜‰

Fitness

My ā€œretirementā€ fitness routine continues to evolve and refine itself.  Itā€™s nice to have the flexibility to take advantage of weather and opportunities for more spontaneous exercise.

Solidly, I am attending three weight classes a week.  With a warmer Saturday, I returned to Marieā€™s water class and caught up with my water buddies.  I absolutely love Saturdays at the Persimmon pool.  I cannot even explain the way it makes me feel.

Sunday I went for a four-mile run, a mile walking cool down and then we rode our ebikes for an hour.Ā  Today Iā€™m ready for a little ibuprofen.Ā  But the weather was so perfect, itā€™s hard not to overdo on those days.

Iā€™m still babying my shoulder but maybe need to concentrate a bit more on abs.  Hmmmm.

Spring Table

One of my fav YT channels is A Charming Abode and this week Leslie did two Easter tablescapes ā€“ one from Target and one from Home Goods.  She really inspired me to put something similar together and Iā€™ll show you what I come up with next post.

I donā€™t have anywhere near her talent, but I think I might be able to pull something together.Ā  Since I love bunnies so much this year.
