Yummy Baked Glazed Donuts

If you know me well, you know that donuts are not on my list of things I eat.  Ever.  As in the past 20 years.  They are just too full of fat and sugar.  And I can eat six at a time.  And never get full.  All in all, just a bad food choice for me.

And then.  Along came an adorable donut pan.  Oh, did I mention itā€™s in champagne gold?  How could I not buy it?  I ask you!

I found a reasonably healthy recipe on easyasapplepie.com and tada, Iā€™m back in the donut business.  This recipe calls for only two tablespoons of butter and 1/3 cup of sugar.  That was for about nine donuts (maybe more, but I messed up the batter and wasted some).  Not too bad, huh?

As a bonus, I subbed the all-purpose flour for gluten-free flour and made a tasty treat the hub can eat guilt free.

Here is the good, bad and ugly of this recipe from my kitchen.

Good

These are small, light and delish coming right out of the oven.  The pan is so nice, I used the tiniest bit of avocado oil spray and the donuts slid right out.  I might not have really needed the spray.

There are very few ingredients and all ingredients were what I have on hand.  Nothing strange here.

I had the opportunity to use my organized measuring cups and spoons and I have to say it was a delight not squinting to see what size spoon I had.

Bad

The dough is sticky and messy.  And of course, I had it everywhere.  Itā€™s just the way I roll in the kitchen.  It takes very little mixing and goes into a pastry bag (which I donā€™t have) or a plastic bag with a hole cut in the corner. 

Since Iā€™m no expert in the pastry department, my first hole was too big and the dough just plopped out.  So I made a tiny hole in the other corner and because of the way the bag is made with a fold, the dough came out in two rows. 

I finally cut open the bag and used a small spatula to spread the dough as best I could in the pan.  The tops are not so pretty, but next time Iā€™ll use a different bag.

Ugly

I went pretty lightly on the glaze and I didnā€™t use sprinkles so my donuts are not nearly as pretty as Elenaā€™s.  Maybe I wouldnā€™t really call them ugly.  Hers are BEAUTIFUL though.

All Clean and Tulips Too

Oh, you know it ā€“ the mess in the kitchen.  I made a new batch of biscuits while I was in there and I dirtied every single thing in my kitchen.  So, I had to do dishes, scrub down the counters and mop the floors.  Itā€™s all delightfully clean now.

After a little jaunt to Trader Joeā€™s this week, I brought home a bouquet of two dozen tulips in the most delightful coral color.

There are so many, my kitchen, living room and bathroom all have beautiful, cheerful blooms.  Spring is official when I buy the TJā€™s daffodils and I didnā€™t see them yet, but Iā€™m calling a bit of spring now with these tulips.

Speaking of spring, I know so many of my dear friends have been hit with brutal winter weather, and I want you to know I am sending prayers for you and your neighbors.  Itā€™s just awful.

Visit with Cyndi

Recently my DF Cyndi took a winter visit to Sedona and she and I met up in Cottonwood for a glass of wine and a little hike and a little lunch.  I met her aunt and friend and we had some good laughs and a wonderful afternoon.

Cyndi (as is the case with most of my friends) is such a beautiful, intelligent and fun person to be with.  I am thankful she was able to make the trip here and we were healthy and happy.

I value each of my friends above gold and I am NOT being corny. You are precious.

Since then, I am again observing Dry February and laying off the wine and champagne.  Iā€™m making up for the good by eating lots more sugar and snacking on salty things.  Itā€™s hard to get all the good habits in one place at one time, isnā€™t it?

I am keeping up with my workouts and am pretty faithful with my AM yoga for back health.  Letā€™s do a workout post soon.  Do you have any suggestions or favorite moves you want to share?  Iā€™m happy to try anything new.

  1. My DIL Jill was here with Dave and family for a month. We cleaned out our huge pantry and I rediscovered (or uncovered!) a mini-donut pan! You have me inspired to make some with the twins when they come for a month this summer! I’m in need of Nana-projects with them. This should be a fun one. They are game to learn how to cook some more meals. Now to find/make some chef hats and aprons for them.

  2. I just binged on birthday donuts last weekend – It was my 50th birthday and I deserved to eat a donut (or three) with pink icing and sprinkles! I loved visiting with you and can’t wait to do it again!
