Hello, November.  Where did you come from all of a sudden?  Hmmm.  Well, November seems like a perfect time to make cinnamon apple bread and get the smell-o-vision going in my kitchen.  Ah, sugar and cinnamon in the oven!

This bread is super easy and even a non-baker such as myself can make this successfully. 

I’ve been keeping my sugar consumption down, so I made this more for hub.  Which means I had to make gluten free.  No problem subbing the all-purpose flour with the gluten-free selection. 

Sugar or no sugar, I still had a piece warm out of the oven to make sure it was okay to share with you.  I know, it’s all for the cause.

There are many variations of this recipe on the internet and they are all basically the same.  I don’t claim to have invented this recipe, but like everything I do around here it’s an amalgamation.   Is that a word?

Plus I got to use my apple peeler, corer and slicer.  Score!

Ever since I made the gluten-free apple crisp, I’ve been using this tool frequently.

Have I ever mentioned how I came about procuring the peeler, corer, slicer?  Sorry if I’ve already shared this story.  When we lived in Reno we made an annual trip to Apple Hill in the Sierra Nevada foothills. One of the ranches we visited was demonstrating and selling them. After we had a free peeled apple we snapped it right up.

Now they are readily available online, but this was back in the days before online shopping. Hard to remember back that far, right?

Apple Hill is a community of ranchers who have banded together over the years and marketed themselves to a wide area in California and Nevada.  The community hosts lots of fall-themed events, has B&Bs, petting zoos, wineries, you name it. 

When we attended, it was great family fun.  I believe it’s really crowded now, but if you’re in the area and get a chance to go, do it!

You are never going to believe this coincidence. We take our Modere collagen in a shot glass every morning. I have not one time paid attention to the glass. Today, I looked and it’s from Apple Hill! What? I have no memory of when we got this. But there you go.

Anyway, I digress.  Back to the recipe.

Cinnamon Apple Bread

Ingredients

  • ½ Cup Brown Sugar
  • 1 ½ Tsp Ground Cinnamon
  • 2 Eggs
  • ½ Cup Granulated Sugar
  • ½ Cup Melted Butter
  • 1 Tsp Vanilla Extract I added a little more
  • Cups All-purpose Flour I used gluten-free
  • 1 Tsp Baking Powder
  • ½ Tsp Baking Soda
  • ¼ Tsp Salt
  • 2 Cups Chopped, Peeled, Cored Apples I used two apples

Instructions

  • Preheat oven to 350°. Spray or use parchment paper an 8 x 5 loaf pan.
  • In a small bowl, whisk brown sugar and cinnamon for topping.
  • In a large bowl, whisk eggs and granulated sugar. Add melted butter and vanilla and thoroughly combine.
  • In a medium bowl, sift or mix together dry ingredients. Add to large bowl and stir until just combined. Batter will be thick.
  • Fold in apples.
  • Add half the batter to the loaf pan. Sprinkle ¾ of the brown sugar mixture. Spread the remaining batter and top with remaining brown sugar.
  • Bake for 45 minutes or until lightly golden on top and inserted toothpick comes out clean with a few moist crumbs. Tent with foil for last 15 minutes if the top gets too brown.
  • Cool completely before slicing.
