Hello, I thought I would pop in mid-week and share my favorite and yummy green salad with you just in time for a long weekend.

The recipe is below, but really you can add ingredients you have on hand or add/subtract according to your taste buds.

This salad has so many diverse ingredients, you can savor and enjoy each bite. This is no ordinary green salad!

Sweet corn is the surprising ingredient. It’s texture and sweetness is unexpected in a green salad. TJ’s has the best sweet corn and a small amount thaws in the microwave in about 30 seconds.

Of course the dried cranberries also add to the sweetness while the tart homemade vinaigrette offsets it. Warning about the red onion! I use just a few very thin slices so it doesn’t take over the entire salad

Balsamic Dressing

My basic dressing is on this post. Using a blender helps emulsify (is that the right word?) the olive oil so it mixes better after refrigerating.

Of course I love to store my dressing in my tiny Quattro jar. Refrigerated dressing needs to warm at room temperature so the oil mixes into the vinegar.

Hearty Meal

This yummy green salad paired with Skinnytaste roasted red pepper soup and half a ciabatta made a wonderful lunch.

Ingredients

  • Baby lettuce, arugula or greens of your choice
  • cup Chopped cucumber
  • cup Chopped tomato
  • Sliced red onion
  • 1 tbsp Pine nuts
  • 1 tbsp Dried cranberries
  • cup Sweet corn

Instructions

  • Line large bowl or dish with lettuce leaves, top with all ingredients except pine nuts. Toss with balsamic dressing. Top with pine nuts.
