Simple Grilled Potatoes in Foil

Spring keeps teasing us and we are in and out of the house using the patio when we can.  Hub fired up the grill one fine evening. We had simple grilled potatoes in foil and barbecued chicken for a quick and delish meal.

This recipe can easily be adapted to be dairy free by omitting the butter (what fun is that?). The Creole seasoning we use is Tony’s which is not considered gluten free because of their manufacturing method.

If strict gluten-free guidelines are being followed, use salt, pepper, garlic powder and a pinch of cayenne.

Here’s what we (by which I mean he) did:

Ingredients

  • 4 medium potatoes of your choice (we used russet)
  • dried chopped onion to taste
  • Creole seasoning
  • ¼ cup butter cut into pats

Instructions

  • Slice potatoes uniformly about ¼ inch. Place in a colander, rinse off starch and dry.
  • Place potatoes in a piece of foil large enough to fully enclose. Non-stick foil works best.
  • Season to taste with dried onion and Creole seasoning. We like ours quite spicy.
  • Dot the top with pats of butter for flavor.
  • Close foil tightly and place on heated grill at about 400℉.
  • Turn foil packet in ten minutes. Turn twice more until about 30 minutes total cooking time. Potatoes should be tender inside and crispy outside.

Wrap Up

We had a pretty quiet weekend which was by design. Every once in a while I need a recharge. I did read a book and caught up on some of my podcasts.

Sunday I managed to destroy my kitchen baking gluten-free oatmeal cookies and biscuits. I don’t like baking, but it’s nice having these two treats on hand rather than store bought.

The upcoming week looks to be fairly busy with some big treats with friends which is always something I look forward to.
