Refreshing Summer Salads

Are you one who loses your appetite during hot weather?  Mmm, me neither.   I’m as voracious an eater as ever.  But, a refreshing summer salad makes for a perfect evening meal. And if you don’t have much of an appetite, it’s perfect.

Here are a couple salads I made this week.

Trader Joe’s Mediterranean Style Salad Kit

Kits are rarely on rotation around here mainly because kits don’t contain fresh tomatoes and a salad ain’t a salad without tomatoes.

And their dressings are usually too sweet or too oily. 

But this one was tops.  Really.  There were tons of add-on packets with little goodies like roasted chickpeas and sundried tomatoes.  It probably didn’t need an extra fresh tomato, but I added two to mine anyway.  I added just a tad of extra red wine vinegar to the dressing and it was good.

There was enough for two main dish salads for me.

Homemade Green Salad with Chicken Tender Toppings

For hub, I made a salad with romaine, the fantastic Trader Joe’s radishes of many colors and left over chicken nuggets.

A big rule around here is cook once, eat twice.  We love leftovers, so that’s not a problem.

Gluten-free cornflake crumbs with a tad of cayenne coated chicken breast nuggets which were then placed in the air fryer for about 10 minutes per side; a total of 20 minutes.  A side of homemade steak fries made a quick, relatively healthy lunch on Day 1 and the leftover cold chicken nuggets were a nice topping on the salad for Day 2.

Fitness

Well.  It’s not sizzling hot here this summer, but the price we have paid is really high humidity.  It hasn’t stopped me from getting out for early morning walks when I can.  But, oh my, I am drenched when I get home.  I snapped a pic of our beautiful waterfall around 6 a.m. and you can see how heavy the sky looks.

Getting a little tune up, I met with a physical therapist and I have some exercises I’m doing for my shoulder and back, but mainly I am stretching.  With the roller.  Ugh.  That thing kills my quads.  Which is why I never do it.  Until I am forced by paying money to a PT who tells me to.  Makes a lot of sense, right?

Bottom line though, is that walking is still on my morning agenda and making me very happy.  And sometimes a stop into Starbucks is on the trail.  The lady at my Starbucks is the sweetest and even though I don’t love their coffee, it’s totally worth it.

It makes me feel like a million bucks.

July 2021 Grove Order

This month’s Grove order included totally new bubble bath which is rated for children so should be safe for my old-lady parts, right?  I’ll be reporting back on that soon.

On redux are the rubber gloves.  They are honestly The. Best. Gloves. Ever.  I use them indoors and outdoors always trying to prolong my mani.

The tissue was a free gift in the order and are “tree-free” – whatever that means.  They are sort of stiff, but certainly strong.  I’ll give them that.

Method products were on sale, so toilet bowl cleaner is for the future. 

You know how much I love those sponges.
