Gluten-Free Berry Coffee Cake

There are two motivators for my baking coffee cake.  From scratch.  In the oven.  In the middle of summer.

One.  You.  This blog needs content so it motivates me do something to get me off the couch and then to document it.

Two.  Hub needs gluten free and he’ll eat it.  So will I, of course, but at least that saves me from eating all of it.

If it weren’t for those two reasons, none of this summertime baking would have happened.  Crazy.

My coffee cake doesn’t look much like the inspiration recipe from Pinterest, but it did taste good.  So, please don’t judge by looks alone.

Yummiestfood.com is a new site for me.  On Pinterest the Blueberry Breakfast Greek Yogurt Cake uses ingredients I had on hand, subbing gluten-free all-purpose flour and frozen berries for fresh blueberries.

Have I shown you my hand mixer before?  It’s avocado green and it’s from 1977.  No kidding. 

On a similar note, this recipe calls for a springform pan. Not only do I not have one of those, I’m not even sure how they work. A shallow cake pan lined with parchment worked just fine. Again, I have no shame.

For some reason, my batter looked much thicker than I saw on the site.  I spread as well as I could and then placed the frozen berries on top.  Not pretty, but you know.  With a scoop of ice cream on it, you might not even notice.

Just kidding.

This recipe was a hit and will be on rotation in our kitchen.

What I’m Reading

A.D. 30 by Ted Dekker was my audio book this week.  All the rain made for some lovely walks and lovely walks equal lovely book sessions.  This is my first Ted Dekker book.  I think he may be categorized as a “Christian” writer, but I didn’t find this book to be preachy at all.  I would classify it as historical fiction.

Jesus is a character in the book, but the main character is a woman, Maviah, whose trying tale is captivating rather than annoying.  In other words she hasn’t brought all her misfortune upon herself.

I really liked the book and liked the narrator.  Recommend.

Upon my DS Monique’s recommendation, I listened to Born Standing Up:  A Comic’s Life by Steve Martin.  On audio, he is also the narrator.  I really knew absolutely nothing about Steve Martin, so everything in the book was new to me.  He writes with honesty without being hurtful or sensational. 

Steve’s journey had him crossing paths with many who would become well-known and those connections linking to success have always fascinated me.

Much like I found him in the past, his comedy comes from a dry place and then trips me up and cracks me up.

As you can imagine, I’m walking along by myself and suddenly, I’m laughing out loud.  I’m sure someone in the neighborhood will have me committed soon.

False Assurances:  Ben Porter Series by Christopher Rosow is my Kindle read this week.  I have no earthly recollection about how I heard of this author, series or character since it is nothing available at my library.

But I was somehow so smitten with the idea, I actually.  Wait for it.  Purchased it.  Yes, I bought a book!  A Kindle book, but I bought it.

Does a chunky computer nerd government worker getting sucked into an FBI case sound good?  Yep, it is.  Ben Porter will be invited back into my library again.

Worth the purchase.

  1. The Gluten Free Blueberry Cake would be a good one for the next time Mindi and Rob are here. I saw on the recipe that it calls for all purpose flour. Is there a GF trick or a “best substitution” for the regular flour? Never having successfully made a palatable GF recipe before, I defer to your experience!
