Homemade Sourdough Pancakes

Step right up, pancake fans! Homemade sourdough pancakes are so easy, even I could whip up a stack.

I can devour a lot of pancakes in one sitting. So making them is a rare occurrence in my house. But every once in awhile. They call my name.

The high-protein cottage cheese pancakes I make do stick with me and feel like they are a pretty healthy choice.

But Denisse gave me some sourdough starter several months ago and I have been experimenting with different recipes, and thought I would give a pancake recipe a go.

Searching online posts, I chose The Clever Carrot’s Best Sourdough Pancakes recipe. This recipe is simple, uses ingredients I have on hand, and promises fluffy yummy pancakes.

A full batch yields a lot of pancakes. I hauled out my Loge cast iron skillet, turned the gas on low and used a pat of butter to fry with.

A side of berries and the tiniest amount of maple syrup was just perfect for a decadent brunch.

But, yeah. It’s a lot of pancakes.

A gallon Ziploc bag, a Sharpie marker and a sheet of parchment paper cut into small squares to the rescue.

After the pancakes are fully cool, they will still be quite moist (yummy!) and freezing them will mean a big stuck-together brick of pancakes. So I put a square of parchment between each one and stacked them in the Ziploc for the freezer.

Now I can remove a couple now and then for a future treat.

My pancakes tend to have very odd shapes. Not exactly Mickey Mouse ears or anything else you’d post on Pinterest, but they are still yummy.
