Air Fried Beef Taquitos

Homemade air fried beef taquitos are yummy and satisfying with a secret ingredient – potatoes!

The taquitos are hearty enough for dinner or whimsical enough to serve as appetizers.

Using an air fryer cuts down on the oil needed. It’s just enough to make the tortillas crunchy and firm.

My sister gifted me with a bottle of Mountain Screamer salsa, and that was the perfect dip since these really are not all that spicy.

This recipe works best as a team exercise. Hub does most of the initial cooking; I clean as we go along.

Then when it comes time to stuff the tortillas, we form a little assembly line. He dips and fills with meat. I sprinkle with cheese.

We preheated the air fryer to 400 for about 10 minutes prior to cooking. It’s best to keep a close eye on these. You want them super crispy but not burnt.

You can see ours got quite brown, and though they might seem a little burnt, they were actually perfect.

Air Fried Beef Taquitos

Yummy homemade treats perfect for a meal or appetizers

Ingredients

  • ¾ pound lean ground beef
  • 2 medium potatoes
  • ¼ cup taco seasoning or to taste
  • 2 cups water
  • 3 tbsp tomato paste
  • 12 corn tortillas
  • 4 oz shredded cheddar cheese
  • 1 tbsp avocado oil
  • chili powder & cajun powder to taste

Instructions

Filling

  • Peel & dice potatoes and boil until soft. Lightly mash with a potato masher.
  • Fry ground beef and when browned, add taco seasoning, water and tomato paste. Simmer until water is mostly absorbed.
  • Add potatoes to ground meat and combine thoroughly.

Tortillas

  • Heat a stack of tortillas in the microwave for about 30 seconds to soften them.
  • Whisk together oil, chili powder and Cajun seasoning in shallow dish.
  • Dip one side of a tortilla into the oil mixture. This will be the outside of your taquito. Add about two tablespoons of filling to the inside and top with cheese.
  • Roll and place seam side down on a pan lined with parchment or foil.
  • Place in a preheated 400° air fryer for 10 minutes, flipping 1/2 way.

Garnish

  • Garnish with your favorite toppings such as lettuce, salsa or sour cream.
