Air Fried Beef Taquitos
Yummy homemade treats perfect for a meal or appetizers

- ¾ pound lean ground beef
- 2 medium potatoes
- ¼ cup taco seasoning or to taste
- 2 cups water
- 3 tbsp tomato paste
- 12 corn tortillas
- 4 oz shredded cheddar cheese
- 1 tbsp avocado oil
- chili powder & cajun powder to taste
Filling
Peel & dice potatoes and boil until soft. Lightly mash with a potato masher.
Fry ground beef and when browned, add taco seasoning, water and tomato paste. Simmer until water is mostly absorbed.
Add potatoes to ground meat and combine thoroughly.
Tortillas
Heat a stack of tortillas in the microwave for about 30 seconds to soften them.
Whisk together oil, chili powder and Cajun seasoning in shallow dish.
Dip one side of a tortilla into the oil mixture. This will be the outside of your taquito. Add about two tablespoons of filling to the inside and top with cheese.
Roll and place seam side down on a pan lined with parchment or foil.
Place in a preheated 400° air fryer for 10 minutes, flipping 1/2 way.
