Cooler weather finally came into Arizona this weekend and it inspired me to celebrate fall!
I didn’t want to go out, so in my own kitchen, I tried a new recipe for creamy pumpkin pie spice latte.
From Sally’s Baking Addiction, I made a recipe I shared before: soft baked pumpkin donuts .
And then I put together an easy DIY pumpkin spice mix you can use all season.
Here’s what I did as I created my own little Saturday morning coffee shop!
Why Make Your Own Pumpkin Spice Latte and Donuts at Home?
It’s all about the diets around here. Oh, and yeah, who wants to get up and get presentable first thing in the morning? Those days are over, baby!

From Low Carb Love, I made the Hot Pumpkin Spice Latte. I have tried pumpkin drinks at home before, but they were always messy and not that great.
This one turned out so good, I couldn’t wait to share it.
This coffee is, of course, low carb, but her recipe for the creamer calls for sugar-free maple syrup which I do not have. I subbed for regular maple syrup and the entire creamer recipe only calls for 1/4 cup. The creamer will make several lattes, so I don’t think it’s a huge amount of sugar.

Can I just say? This one is GREAT. As in a little too yummy.
I had two cups. I really could not stop myself. And there is creamer leftover so I know there is more in my future.

Pumpkin Pie Spice Ingredients
I didn’t have any pumpkin pie spice, but I did have all the ingredients on hand, so I quickly made a little shaker-full to have on hand.

Here are the ingredients in case you need some too.
- 3 tablespoons ground cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons ground nutmeg
- 1 ½ teaspoons ground allspice
- 1 ½ teaspoons ground cloves
Spices are so expensive, so if you have all (or most) of the ingredients on hand, why not make your own?

Baked Pumpkin Donuts
From Sally’s Baking Addiction, I made a gluten-free version of her baked pumpkin donuts.
Pumpkin puree may be healthy, but the amount of sugar in these donuts is off the charts.
I wanted just a wee bit to go with my fancy coffee and the rest is a treat for John. Who is gluten-free, of course.

I shared this recipe back in 2021. Where does the time fly? I literally have not made them since then. And I have that adorable donut pan!

I mentioned last post that we had an upcoming trip. Hub and I are taking a (really long) Caribbean cruise and leaving Black Friday!
By really long, I mean it is an eleven-day cruise. I’m not a huge cruise person, so we will see how it goes. The itinerary is very interesting and stops at some islands that are of interest to me.
Additionally, we fly into Jacksonville, Florida, a few days early and will spend a little time exploring that part of the county.
We purchased a basic internet package, so I can make a few blog post while we’re gone to share what’s going on.
