Oatmeal Breakfast Bars

Do you have someone in your house who resorts to eating Oreos for breakfast when he doesn’t feel like going to the trouble of making something decent?

Not naming any names, but when I see that happening I just cringe.

So this week I found a recipe for homemade oatmeal breakfast bars I want to share with you. That they are gluten-free is a plus!

Here is the inspiration recipe (from feelgoodfoodie.net) which is healthier than the version I made. I used butter instead of applesauce because I didn’t have applesauce, but I actually think that would have been better.

These turned out really crumbly, but don’t throw away the crumbs because they are full of walnutty goodness. Just pick up a spoon and enjoy it.

Baking them on parchment paper means clean up is a snap!

Oatmeal Breakfast Bars

Delicious gluten-free treat good for any time of the day
Servings: 16 bars

Ingredients

  • 2 cups oatmeal I used quick oats
  • cup sugar
  • tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • 2 eggs I used jumbo
  • ½ cup milk I used whole
  • ¼ cup butter, melted
  • 1 tsp vanilla extract
  • ¼ cup walnuts, finely chopped

Instructions

  • Preheat oven to 350°. Line an 8" pan with parchment.
  • In a medium bowl, combine all dry ingredients (except walnuts).
  • In a large bowl combine wet ingredients.
  • Add dry ingredients to wet ingredients, combine well and allow the flavors to blend 10-15 minutes.
  • Fold in walnuts and spread into pan.
  • Bake 30-35 minutes until golden brown. Allow to cool on a rack and slice into bars.

These were so good warm out of the oven so some of them didn’t quite make it to the next morning’s breakfast.

I froze half a batch so hub doesn’t get tired of them. Two bars with a glass of milk seems to get him going in the a.m.

I frequently make the Joy of Cooking version of oatmeal cookies using gluten-free all-purpose flour and hub still loves those. But these are a nice change.

And they aren’t packaged junk food.

    1. Those are the only recipes I make! Either I have ingredients or I can easily substitute.
