Oatmeal Breakfast Bars
Delicious gluten-free treat good for any time of the day
Servings: 16 bars
- 2 cups oatmeal I used quick oats
- ⅓ cup sugar
- 1½ tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- 2 eggs I used jumbo
- ½ cup milk I used whole
- ¼ cup butter, melted
- 1 tsp vanilla extract
- ¼ cup walnuts, finely chopped
Preheat oven to 350°. Line an 8" pan with parchment.
In a medium bowl, combine all dry ingredients (except walnuts).
In a large bowl combine wet ingredients.
Add dry ingredients to wet ingredients, combine well and allow the flavors to blend 10-15 minutes.
Fold in walnuts and spread into pan.
Bake 30-35 minutes until golden brown. Allow to cool on a rack and slice into bars.
