For perfect boiled eggs, and more importantly, for the slickest easy peel ever, use an Instapot.Ā I was reluctant to purchase an Instapot because I didnāt really see the value in one more expensive appliance in our smallish kitchen. Especially for the main purpose of boiling eggs.
But John was really convinced when DF Barb showed him how effortlessly hard boiled eggs are prepared in the Instapot.Ā You simply place a few eggs in the bottom of the pot, cook for five minutes and the shells practically slip right off.
Deviled eggs are one of my favorite picnic staples and when we recently packed a picnic, it was so easy to boil six eggs, peel and prepare a dozen perfect deviled eggs in just a few minutes.
Now, honestly, I have a very easy way to boil eggs on the stove –Ā place in a pot of cold water, bring to a boil over medium heat, cover with a lid and turn off the heat after a minute or so.Ā Go about your business and donāt worry about the stove boiling over or overcooking or undercooking your eggs.
However, the big difference using the Instapot is the peeling.Ā No matter how many tricks I used I could never find an easy and reliable way to peel the eggs. Half the white part was always missing.
For some reason the Instapot method makes peeling a snap. Itās quick and requires very little running water. Always a plus with our expensive water.
So, Instapot win for boiled eggs.Ā But isnāt it a little extravagant to purchase something like that for boiled eggs?Ā Yes, it is, my friend.Ā At least to my very thrifty character makeup it is.Ā
Now we need to find recipes that make it totally worth the purchase.Ā And the storage space it requires in the pantry.Ā Which is still organized, I might add, after last week’s pantry overhaul.
The recipe we used for roast beef was great, but the vegetables were overdone.Ā We need to figure out that one.
Since being on the SIBO diet, of which I have badly fallen off, I miss refried beans more than anything. They have been a staple in my diet for the past umm, many, years. So this week, Instapot Refried Beans is on my To Do List and Iāll report in on Saturday.
Ok, letās have a serious talk. What about Christmas? Is it just on Instagram or is everyone putting up their Christmas decorations and just skipping Thanksgiving?
DF Evonās neighborhood is already a winter wonderland.Ā Well, as much as you can accomplish that in the Sonoran Desert.
But. My point is, of course, bah humbug. Do we really need quite so much Christmas immediately after Halloween? Is anyone with me on this? I think Iām on the opposite end of the scale and may bypass the holiday completely.
And, by the way, thatās nothing new for me. Christmas is not my favorite holiday.
Speaking of that, winter is not my favorite season.Ā Our temperatures have dropped off substantially.Ā As in dipping near freezing for a morning low.Ā Brrrr. This morning the fire in the family room went on for a bit and Roxy and I had our morning read in that cozy atmosphere.
I met my posse for a Saturday morning walk in nearly perfect weather, but when I got home it turned cloudy and blustery which was perfect for spending the day on the couch with my Kindle. And a blanket. And endless cups of hot tea.
We played pickleball Sunday but opted not to brunch at the pool with the cooler temps. I took a pic of the pool which was stunningly beautiful and completely empty.Ā It cannot be heated enough for my taste after a windy night, so apparently, Iām not the only one weenie in town, judging by the attendance.
We took a couple days off from home improvement projects – ha! But, never fear, we have some more coming up very shortly. Not too sexy, but I’m sharing anyway.
