Move over, Jimmy Dean, a new breakfast bowl’s in town. And these make ahead breakfast bowls are homemade and live in the freezer until hungry man is ready for a hearty breakfast.
Hub likes a big breakfast: eggs, meat, potatoes and a cheesy topping. But who wants to go to all that work every morning?
Exactly nobody.
So being the excellent wife and Susie Homemaker I am (no snickering here, please), I homemade all his favorite breakfast items and combined them into separate breakfast bowls to freeze.
This recipe yields six breakfast bowls which are a bit bigger than their store-bought counterparts. And oh, so fewer ingredients!
Except for the sausage, I knew every ingredient that went into these. And a lot of love too!
Prepping
Hub fried a package of Jimmy Dean breakfast sausage, less a few patties we ate right away. So let’s say he made ¾ pound for this recipe.
I peeled four large russet potatoes, diced them in my Mueller chopper and pre-boiled them for a few minutes until they were slightly soft. I then drained them and dried them with a clean tea towel. After they were dry, they went into a pan with hot oil and fried up until crispy but not mushy.
We had really large eggs and no milk, so I scrambled ten eggs in about ½ cup of half and half. I peppered them, but added no salt since I knew the sausage and cheese would have plenty of that.
After the kitchen was a disaster from making three separate items, I used six separate food storage bowls and assembled as such:
- 1 cup potatoes
- 1/3 cup fried sausage
- ½ cup scrambled eggs
- A sprinkling of grated cheddar
Assembling them cooled the ingredients quickly so after labeling them, they were cool enough to go right in the freezer.
Honestly cleaning up the mess was the most work.
Hub has been eating these most mornings (after he adds more cheese!) and loves the hearty filling homemade breakfast after a two minute commitment of heating in the microwave.
If you have an extra hour someday to prepare these, they are really nice to have on hand. And you might be like me: love breakfast for dinner. They would make a great evening meal too.
Homemade Make Ahead Breakfast Bowls
Ingredients
- 4 russet potatoes, peeled and diced
- 1 tbsp avocado oil
- 10 eggs
- ½ cup milk or half and half amount will vary depending on desired consistency of eggs
- ¾ pound breakfast sausage, fried
- ½ cheddar cheese
Instructions
- Peel and dice the potatoes. Pre boil for a few minutes until the potatoes just become soft. Drain well and dry with a clean tea towl.
- Fry the potatoes in oil until browned and completed cooked but not mushy.
- Combine eggs, milk and season to taste. Cook until just done.
- Assemble bowls with 1 cup of potatoes on the bottom, ⅓ cup cooked sausage next, ½ cup eggs last and sprinkle with a bit of cheddar.
- Label and date bowls and stick in the freezer.
- When ready to eat, remove the frozen bowl onto a microwave-safe plate and heat 2-2½ minutes.
