Homemade Make Ahead Breakfast Bowls

Hearty, meaty breakfast excellent for the freezer

Ingredients

  • 4 russet potatoes, peeled and diced
  • 1 tbsp avocado oil
  • 10 eggs
  • ½ cup milk or half and half amount will vary depending on desired consistency of eggs
  • ¾ pound breakfast sausage, fried
  • ½ cheddar cheese

Instructions

  • Peel and dice the potatoes. Pre boil for a few minutes until the potatoes just become soft. Drain well and dry with a clean tea towl.
  • Fry the potatoes in oil until browned and completed cooked but not mushy.
  • Combine eggs, milk and season to taste. Cook until just done.
  • Assemble bowls with 1 cup of potatoes on the bottom, ⅓ cup cooked sausage next, ½ cup eggs last and sprinkle with a bit of cheddar.
  • Label and date bowls and stick in the freezer.
  • When ready to eat, remove the frozen bowl onto a microwave-safe plate and heat 2-2½ minutes.
