Homemade Granola Bars

These homemade granola bars will beat anything you’ll buy in the store!

They are so easy to make and so good.

And guess what? Yep, I used all ingredients already in my pantry.

If you love oats and peanut butter and chocolate and coconut, read on!

I will say that this may be the ooey-gooiest recipe I ever prepared. Scooping out coconut oil, peanut butter and honey was a little messy. But not a problem. I licked everything before it went into the sink.

The ingredients come together in just a few minutes on the stove top. I left out a small amount of chocolate chips for the topping. The chocolate chips that were stirred into the pot melted quickly and I thought some on top would be nice.

Do you know the trick with parchment paper? If you wad it up and then lay it in your dish it won’t slip around or fly out.

After the ingredients are pressed into a pan, it goes into the fridge for a few hours to harden up. Mine turned out a bit thick, so I cut them into smaller squares.

I intend to share these on an upcoming lengthy plane ride, so I individually wrapped them in waxed paper and froze them.

When it’s time for the plane ride, they’ll be perfectly thawed and hopefully not melted all over.

Homemade Granola Bars

These homemade granola bars are SO much better than any kind you'd buy at the store. They're easy to make, and they're chewy, nutty, and delicious.

Ingredients

  • ¼ cup coconut oil
  • 1 cup smooth peanut butter
  • ½ cup honey
  • 1 tsp vanilla extract
  • 3 cups rolled oats
  • ½ cup shredded coconut
  • ¼ cup flax or chia seeds
  • ½ cup chocolate chips I used semi-sweet and kept some aside for topping

Instructions

  • Add coconut oil, peanut butter, honey and vanilla extract to a pot on the stove.
  • Melt over medium low heat, stirring constantly until melted. This only takes a few minutes.
  • Remove from heat and stir in oats, coconut, flax or chia seeds and most of the chocolate chips.
  • Line a baking pan with parchment paper and press mixture down evenly into the pan.
  • Refrigerate for a few hours.
  • For any leftover granola bars, store in the fridge. I wrapped mine individually in waxed paper and froze for future enjoyment.
