Homemade Granola Bars
These homemade granola bars are SO much better than any kind you'd buy at the store. They're easy to make, and they're chewy, nutty, and delicious.

- ¼ cup coconut oil
- 1 cup smooth peanut butter
- ½ cup honey
- 1 tsp vanilla extract
- 3 cups rolled oats
- ½ cup shredded coconut
- ¼ cup flax or chia seeds
- ½ cup chocolate chips I used semi-sweet and kept some aside for topping
Add coconut oil, peanut butter, honey and vanilla extract to a pot on the stove.
Melt over medium low heat, stirring constantly until melted. This only takes a few minutes.
Remove from heat and stir in oats, coconut, flax or chia seeds and most of the chocolate chips.
Line a baking pan with parchment paper and press mixture down evenly into the pan.
Refrigerate for a few hours.
For any leftover granola bars, store in the fridge. I wrapped mine individually in waxed paper and froze for future enjoyment.
