Favorite Fall Foods

I can never resist a bit of alliteration.  Sorry about that crazy title.

Although we’re still in full-on summer weather here, it might be cooling down a bit where you are and you’re looking for a bit of comfort in your diet.

Here are some of my favorite fall food recipes I’ve shared over the years that might inspire you to dig in at home and enjoy an evening with maybe some candlelight and a good book. 

Maybe a furry friend and some soft music. 

How about some baggy sweat pants and a favorite tee shirt.

I could go on and on, but you get the idea.

And, if you know me, the recipe needs to be simple and with ingredients I have on hand or can easily substitute.

Tomato Soup and Grilled Cheese

My all-time favorite cool-weather meal.  It’s easy to add a little tossed salad to make this even healthier.  Or in my case, a side of wavy chips, but the old-time Cooking Light version of this soup is simple and lighter than most creamy recipes.

If you have fresh tomatoes you need to use up, here is my version for that.

Pancakes

Do you love to eat breakfast for dinner?  Me too!  I’ve been known to sit down at Cracker Barrel in the evening and order a cup of decaf and a stack of pancakes.

The sourdough pancakes I shared here are so delicious I could eat them any time.

For a more savory dinner, fry up a side of bacon and dig in.

If you don’t have sourdough starter on hand, high protein cottage cheese pancakes really will keep you full for house.

Broccoli and Cheese Soup

Okay, this is the last soup recipe, I promise.  I shared this recipe two years ago, but I’ve been making it for over 20 years. 

It’s that good, I promise.

The recipe calls for Velveeta which is known for its great cooking qualities, but you could sub another cheese and it would be great.

Homemade Chicken Pot Pie

This recipe is super easy if you have leftover rotisserie chicken, but if you don’t, cooking up a chicken breast is fast and easy.

In fact, I often will place a couple in the crockpot with a bit of water, celery, onion, salt and pepper to cook up while I’m doing something else and then voila!  Chicken for any number of recipes.

And, if you don’t have a store bought pie crust on hand, any simple crust recipe will work. The chicken pot pie recipe only calls for a bit of crust on top, so it would be a small batch.

Wrap Up

Any big weekend plans?  I’m laying low this weekend (after that crazy busy sister adventure last week!) and hanging around home.

My guess is I’ll be revisiting some of these recipes myself and pretending like it’s chilly out.
