Valentine’s day is coming right up and it seems like a good time to think of doing a little something special for those you love. Even if the one you love is yourself.
How about chocolate molten lava cake? For one? Yep, it’s a mug cake.
For our Valentine’s celebration, I’m going to whip up two in some darling ramekins I found during last weekend’s TJ Maxx haul. I have no idea why ramekins are an obsession for me. And they are sort of taking over one of my cupboards. So I need to stop. Or get rid of some.
Mug Cake
This isn’t exactly homemade or healthy. But easy, yes. Mug cakes are perfect when you have a bit of a sweet tooth, but don’t have a cake (possibly because you’ve already eaten the whole thing) or a lot of time to whip one up.

As the name states, the mix goes into a mug and right into the microwave for just one minute. Ta da! Dessert. Or a late night snack.
The recipe for the mix is:
- One box chocolate cake mix
- One box angel food cake mix
Yep, that’s it. Two ingredients.

Whisk together and store in an airtight container. Of course, I store mine in a ziplock so it can go in the freezer. Where all my baking stuff goes because I bake so seldom.
Now, I’m foxing this up a bit for a special Valentine treat and I’m turning it into a molten lava cake.
The secret ingredient is a pudding snack. I used the reduced-calorie chocolate vanilla swirl, but you can use whatever you like here.

Here are the instructions:
Molten Lava Mug Cake
For one cake: In a microwave safe mug combine 3 tablespoons of the cake mix* with 2 tablespoons of water. Whisk together with a fork or small whisk. Drop in 1/2 of a chocolate pudding snack cup, but DO NOT stir. Microwave for 1 minute. Leave the cake in the mug to enjoy. Top with your favorite toppings: whipped cream, ice cream, fruit, nuts.

It’s fun to get creative with toppings using what you have on hand, which is probably what you already love.
