Hot Honey Chicken Drumsticks
Another Downshiftology recipe hit!
Hub likes drumsticks and I’m so-so on them. Nine times out of ten he will just make up a batch with Frank’s Hot Sauce or oven fried to last him a couple of meals.
Downshiftology shared this recipe that marries the hot sauce with a tad of honey and it was a big hit.

I liked that the recipes uses ingredients already on hand. The only exchange I made was lemon for lime. He doesn’t love lime and I’d rather save my lime for some seltzer water. Because I love lime!

Favorite Gadgets Used
I’m sure I’ve shared these gadgets before, but since I use them so consistently, I thought I’d add a little refresher here.

The Oxo measuring jigger is just perfect for small amounts of liquid needed for homemade sauces or dressings.
When you need a tablespoon of oil and one of vinegar, this will be your go-to.
World Market has the best price I’ve found and I believe that’s where I purchased it.
Pampered Chef no longer sells the exact mini whisk I love to use, but Walmart has a set of two that look similar for less than $7.
The new whisks from Pampered Chef (I also own them) are more robust and a little larger. They are also $13 each.

The ThermoPro thermometer I purchased from SurLaTable 100 years ago isn’t carried there, but Walmart has one from the same brand for ten bucks.
When I cook chicken or my beloved sourdough, checking the internal temperature is a must.
Chicken Lettuce Wraps
For an Asian twist, we assembled chicken lettuce wraps this week.

When I see a nice head of butter lettuce at the store, I snatch it up and make yummy “sandwiches” or wraps.
I shared the recipe here and it’s still a good one.
As you can see, the crushed peanut and sesame seed toppings are popular around here!
Chicken Apple Sausage
From Costco, I like having the Aidell’s chicken apple sausages on hand.
Hub separates the package, seals a few in the seal-a-meal and freezes them.

They thaw out pretty quickly and after just a few minutes in the Foreman Grill, I have a nice summery grilled meal from the comfort of my A/C’d kitchen.
For sides with this meal I used fresh mini peppers and couscous from Trader Joe’s topped with a few jalapenos.

The couscous cooks in the microwave in less than 3 minutes, so this entire meal took me about 5 minutes to make.
It took longer to clean the kitchen!
