A lazy morning in my PJs, some large Granny Smith apples on the counter and a mouth a little too sore to tackle raw apples motivated me to try some microwave baked apples.
In less than five minutes prep time and two minutes cook time, a healthy, easy and tasty concoction was created!
Here’s what I did.
Peel and Core Apple
My trusty peeler corer wouldn’t work on this large apple, so instead I used my trusty Pampered Chef knife. Peeling it was easy and really, who cares if a bit of peel is left on? More fiber, right?
Fox it Up
Earth Balance vegan spread, a sprinkling of cinnamon and about 1 teaspoon of brown sugar did the trick. These apples are VERY tart, so I wasn’t sure if that would be enough sugar, but it was perfect.
Foxing it up can include nuts, raisins, maple syrup, you name it. Even ice cream if eating for dessert. But this simple recipe was enough for me for an AM treat.
Zap It
Just two minutes in the microwave left the apples a bit firm and crisp but completely cooked and HOT. Probably because of the butter spread and sugar, but be careful with the bowl.
If you like your apples a little softer, consider another minute or two baking.

Microwave Baked Apples
Ingredients
- 1 large apple, peeled and cubed Use any apple you have on hand. I used Granny Smith which are tart and firm.
- 1 tsp brown sugar Or more if you like it sweeter.
- 1 tbsp butter or buttery spread, melted I used Earth Balance.
- ¼ tsp powdered cinnamon Give it a good sprinkle, more or less to taste.
Instructions
- Combine ingredients in a microwave safe bowl and cook for two minutes. For softer apples, cook one to two minutes longer. Careful, the bowl will be hot!
