A Light Spring Lunch & What I’m Reading

There’s something about a spring weekend that calls for a fresh, easy lunch and a little extra time to sit and read.

Today I’m sharing a simple crispy chicken salad with homemade ranch, along with a few recent reads that were worth the time.

Crispy Chicken Salad with Homemade Ranch Dressing

I made a double batch of chicken breasts, coated in egg whites and crushed cornflakes (gluten-free for my husband). After pounding them to an even thickness, I air fried them in our Ninja for about 10 minutes per side.

Super crunchy!  And not overdone at all.

We ate that for dinner on day #1.

For the next day’s lunch, I topped mixed salad greens with homemade ranch dressing inspired by a recipe from Love and Lemons and diced crispy chicken. 

Yummy and healthy!

I modified the ranch quite a bit—skipping the mayo entirely and using fresh basil and parsley from my herb garden. I didn’t have fresh dill, so dried worked just fine. Since garlic and onion powder don’t always agree with me, I used them very lightly.

What I’m Reading

·  The Friend of the Family by Dean Koontz
Different from his earlier work, but better than some of his recent books. I enjoyed it—4 stars.

·  The List by Steve Berry
Felt like an old-school John Grisham thriller. Smart plot, engaging characters—another 4 stars.

·  The Ghost and Mrs. Muir by R. A. Dick
A nostalgic, charming read. Short and easy, and you can see why it became a film.

·  The Fury by Alex Michaelides (audio)
Started strong but didn’t fully deliver for me.

·  King of the Shadows by Susan Cooper (audio)
A YA time travel story that was surprisingly good—definitely a win.

Weekend Wrap-Up
