Full disclosure: I am not a keto eater. I love any carb you set in front of me. I know. I shouldn’t. And I could lose my extra weight and I could lose some of my inflammation if I’d cut back.
Keto is pretty compelling as a diet. But. I love my carbs. Okay, no more excuses.
An online friend from Australia shared her recipe for keto-friendly bread and I tried it. And I liked it. And I make it frequently.
Yes, I still eat sourdough. But when I want a meal that is filling and savory, this is my go-to “bread.”
And bonus, just a couple ingredients!
It takes about 1 minute to prep, 2 minutes to bake in the microwave and 2 minutes to toast in a frying pan.
I have made it into an egg/sausage sandwich and into a grilled cheese with roasted chilies. Both are awesome.
Here is my recipe for the bread and I promise you, if you try it, you will like it. And you’ll be full and satisfied for hours.
Homemade Keto-Friendly Bread
Ingredients
- 2 eggs
- 2 tbsp ground flaxseed or 3 tbsp almond meal
- 1 tbsp melted butter or oil
- ½ tsp baking powder
- pinch salt
Instructions
- Grease a round Pyrex pan well.
- Beat eggs and stir in all ingredients until it forms a batter.
- Microwave for 2 minutes.
- Cut into two, making two slices of "bread."
- Toast in the frying pan and add desired ingredients for a hearty meal.
