We have been slowly getting back to our normal routine after our big Colorado road trip. It feels like we have been busy with cleaning and cooking and restocking.
Not really fun.
So, in an effort to keep out of the kitchen a bit this week, I spent time prepping and cooking some make-ahead meals.
One for me (Greek chicken souvlaki with tzatziki sauce), one for hub (gluten-free air fried drumsticks) and one we both like (lean Salisbury steaks).
Hereās what I did and how it turned out.
Greek Chicken Souvlaki with Tzatziki Sauce
From Downshiftology, I used this recipe which is great for a summer day. Itās very similar to the Greek chicken I frequently make for the grill.
Trader Joeās to the rescue for this meal. Greek yogurt, chicken tenders and pita bread are all on-hand staples so this was easy to pull together.
The only changes I made were using chicken tenders instead of chunks, a fraction of the garlic, and the Foreman grill in lieu of grilling outside.
We had this with a nice tossed salad for dinner, but there will be enough for a second meal.
Sidenote: Hub is always so happy when I use the Foreman. He appreciates not having to go outdoors and grill.
Gluten-Free Air Fried Drumsticks
There is still a bit of chicken in the freezer from our Seven Sons order and drumsticks make a good meal and/or snack for John.
Gluten-free breading is made from crushed cornflakes. A bit of avocado oil spray and popped into the air fryer and voila! A quick and easy make-ahead meal.
I made a side of mashed potatoes which heat up nicely as leftovers.
Heāll get two meals out of this.
Salisbury Steak
Wow, I looked back to see when I first shared this recipe for you and it was in 2019! Could it be five years already?
This is a light recipe using half ground turkey breast and half lean ground beef. Itās good hot off the stove and it freezes up nicely as a make-ahead meal.
Cross-Country Move
DF Julie is making (yet another!) a big move from Denver to Bend, Oregon. She has been working on selling, donating and clearing out what she didnāt want to take.
Then she expertly loaded up her car and headed west.
I so admire anyone who follows their dream to live in a place that calls to them.Ā When we found our town in Arizona way back in 2005 it was a dream. And, still to this day, I pinch myself when driving into our neighborhood.
I wish Julie all the happiness that living near the ocean brings her.
