Inspired by a copy cat recipe of Totino’s Pizza Rolls, I made these low carb pizza rolls and I must say, Totino’s can’t hold a candle to them!
They are so good. Low carb and gluten free.
They are rich and crunchy and chewy. With just enough pepperoni to taste meaty without being overwhelming.
We were invited to a small get-together for the football game and I brought these with me. They were the perfect appetizer.
This recipe does not make a very big batch, but there are plenty of leftovers, so a double batch would be easy.
Low Carb Love’s recipe calls for more garlic and onion powder than I used, but everything else I did is the same as this recipe.

It would be easy to modify this recipe to include ingredients you like.

Hub found low-sugar pizza sauce which was perfect. However, I used such a tiny amount of sauce on each roll, that a bit of spiced up tomato sauce or even a slice of tomato would be fine.
I halved the amount of garlic powder and onion powder and it tasted just fine.
An egg wash over the rolls before they are popped into the oven makes a beautiful finish.
But, ummm, eggs are sort of hard to come by right now. And I didn’t want to used an egg on such a small amount of rolls.
So I spread a bit of butter on each one. Yummy!

Assembly
Hub mixed the dough and rolled it out for me since those are not my kitchen super powers.

As closely as possible, I cut the dough into equal rectangles. The leftover dough I saved for patch work.
One each rectangle about a teaspoon of sauce, a bit of mozzarella, 3 or 4 pieces of pepperoni and another little topping of mozzarella.
The rectangle gets folded in half and sealed with a fork.
Since the dough is made with cheese and almond flour, we used gluten-free all-purpose flour to dust the rolling pin, hands and a sheet of parchment.
When the filling tried to escape it’s roll, a bit of leftover dough served as a patch.

The more rolls I made the better they looked so I’m going to practice with this recipe a bit more.
Since these rolls were pretty big, I let them bake a full 20 minutes in the counter-top oven.

Wrap Up
These are a fun appetizer to make and to eat. I would say they also make part of an excellent meal.
I could have eaten the whole plate.
