Summer Salad from Eating Well
- 1 tbsp white wine vinegar
- 1 tsp grated lemon zest
- 1 tbsp lemon juice
- ¾ tsp salt
- 3 tbsp olive oil
- 1 English cucumber cut into 1-inch pieces
- 1 pound tomatoes cut into 1-inch pieces
- 2 tbs chopped shallot
- 2 tbsp chopped basil
