  • 1 tbsp white wine vinegar
  • 1 tsp grated lemon zest
  • 1 tbsp lemon juice
  • ¾ tsp salt
  • 3 tbsp olive oil
  • 1 English cucumber cut into 1-inch pieces
  • 1 pound tomatoes cut into 1-inch pieces
  • 2 tbs chopped shallot
  • 2 tbsp chopped basil
