Rotisserie Chicken and Broccoli Casserole
Easy creamy, cheesy and gluten free comfort meal

- 2 cups cooked, shredded chicken
- 3-4 cups broccoli florets
- ½ cup sour cream
- 2 tbsp mayonnaise
- ½ cup shredded cheddar cheese, divided
- salt, pepper and garlic powder to taste
- ⅓ cup crushed crackers, such as Ritz I used gluten-free Shar's Entertainment
- Heat the oven tp 375°.  Grease a 9X9 casserole or use a disposable and set aside. 
- Prep broccoli and steam in boiling water for about 2 minutes until slightly tender and bright green.  Drain and set aside. 
- In the bottom of the casserole, mix together sour cream, mayo and seasonings.  Add the chicken, broccoli, and 1/2 the grated cheddar cheese.  Mix well. 
- Top with crushed crackers and add the remaining cheese.  Bake for 15 minutes until bubbling.  If desired, broil for 2-3 minutes to brown cheese.
