Pickled Cucumbers
Ingredients

large cucumber

cup
white vinegar

cup
water

sugar, optional

salt
few sprigs of dill, optional
red chili pepper flakes to taste
½
white or red onion, sliced in rings or chunks
Instructions
Combine all ingredients and let meld in the refrigerator at least 24 hours. The cucumbers will stay crisp and good for several days and the vinegar can be reused for additional batches.
