Easy Homemade Lettuce Wraps

These homemade lettuce wraps are easy to modify to any taste buds.

Ingredients

  • 1 chicken breast, cooked and shredded
  • 1 head butter lettuce (or other large-leafed lettuce)
  • 1-2 carrots, julienned or thinly diced
  • 1 stalk celery, diced small
  • 1 shallot, thinly sliced
  • 1 tsp sesame oil

Sauce

  • ½ cup water
  • ½ cup soy sauce or tamari
  • 1 tbsp brown sugar
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • red chili flakes to taste
  • ¼ tsp ground ginger
  • 1 tbsp corn starch

Topping

  • ¼ cup peanuts, chopped
  • sesame seeds to taste

Instructions

  • Cook one large chicken breast and shred. I boiled a breast and then shredded with the KitchenAid.
  • Whisk together sauce ingredients.
  • Heat sesame oil in a pan over medium high heat and add veggies until celery just starts to turn soft. (About 5 minutes). Add cooked, shredded chicken and sauce. Reduce heat and simmer until sauce thickens. (About 5-10 minutes)
  • Arrange clean lettuce leaves on a plate and top each leaf with a bit of meat and veggie filling. Sprinkle with chopped peanuts and sesame seeds.
